  1. Add oil, garlic, red onion, cook down until onions are soft
  2. Add chicken stock cube, paprika, and 1 can tomato juice, bring to boil
  3. Add couscous (& some water if necessary)
  4. Turn off heat, let sit 5-10 minutes
  5. Optional: add almonds, tomato, & thyme to top & serve
