Ingredients
Instructions
-
Pat the chicken dry with paper towels and remove the giblets from the cavity, if included.
-
Rub the chicken all over with olive oil.
-
Season generously with thyme, salt, pepper, and rotisserie chicken seasoning.
-
For even more flavor, refrigerate the seasoned chicken for up to 2 hours before cooking. Remove it from the refrigerator while the oven preheats.
-
Preheat the oven to 325°F.
-
Pour out or drink about half of the beer, leaving approximately 6 ounces in the can.
-
Place the beer can in the center of a sturdy roasting pan or beer can chicken holder. Carefully lower the chicken cavity over the can so the chicken sits upright and is stable.
-
Roast at 325°F for approximately 1 hour, checking the internal temperature before removing it from the oven. Larger chickens may require additional cooking time.
-
Cook until the thickest part of the breast and innermost part of the thigh reach at least 165°F.
-
Carefully remove the chicken from the oven and let it rest for 10–15 minutes before removing the can and carving.
