  1. Cook the spaghetti according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a large pan, heat 2 tablespoons of Enzo olive oil over medium heat. Add the garlic cloves and sauté until fragrant (about 1-2 minutes). Be careful not to brown the garlic.
  3. Add the halved cherry tomatoes to the pan and season with salt. Stir in the torn basil leaves and pour in ¾ cup of water. Cover the pan and let the tomatoes cook for 5-10 minutes until they begin to break down.
  4. Remove the garlic cloves from the pan, mash them into a paste, and return them to the sauce. Stir to combine.
  5. Add the cooked spaghetti to the tomato sauce, stirring gently to coat the pasta. Pour in the reserved ½ cup of pasta water and 1 tablespoon of Enzo olive oil. Mix everything together.
  6. Top with more fresh basil and freshly grated Parmesan cheese. Drizzle with a bit more olive oil if desired. Serve immediately and enjoy!
