Sheet Pan Crispy Chicken Taco
High protein, oven baked, and unbelievably easy! These crispy sheet pan chicken tacos are the weeknight dinner you’ll keep coming back to. Juicy chicken cooked with garlic, onion, and a smoky blend of spices gets tucked into tortillas, layered with melty cheese, and baked until golden and crisp. Preheat oven to 425°F and line a baking sheet with parchment.

In a skillet, heat olive oil over medium heat. Add minced garlic and onion; sauté 3–4 minutes until fragrant and softened.

Add the chicken and cook until no longer pink, breaking it up as it cooks.

Stir in diced tomatoes with green chilis, seasonings, and salt. Simmer 2–3 minutes, then remove from heat.

Stir in cilantro and lime juice.

Lay tortillas on the sheet pan. Add chicken mixture and shredded cheese to one side of each tortilla, fold over, and lightly spray both sides with olive oil.

Bake 15–20 minutes, flipping halfway through, until crispy and golden brown.
