Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the whole wheat flour, rolled oats, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together the eggs, honey (or maple syrup), Greek yogurt, almond milk, vanilla extract, and olive oil until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.
  5. Gently fold the chopped apple pieces and any optional nuts into the batter.
  6. Pour the batter into the prepared loaf pan, spreading it evenly with a spatula.
  7. Bake for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean. If the top begins to brown too much, loosely cover the bread with aluminum foil during the last 10 minutes of baking.
  8. Remove the bread from the oven and allow it to cool in the pan for 10 minutes. Transfer the bread to a wire rack to cool completely before slicing and serving.
