Description

This Crockpot Creamy Chicken & Stuffing Casserole is the ultimate cozy comfort food dinner! Tender chicken thighs cook in a creamy garlic herb sauce and are topped with buttery, savory stuffing. Made with simple ingredients and minimal prep, it's an easy slow cooker dinner the whole family will love.

Ingredients
  • 2 lbs boneless, skinless chicken thighs
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup chicken broth, divided
  • 1 packet onion soup mix (or ranch seasoning)
  • 1 box Stove Top Savory Herbs Stuffing Mix (6 oz)
  • 2 tbsp butter, melted
  • Fresh parsley, for garnish (optional)
Instructions

    Place the chicken thighs in the bottom of your Crockpot. Sprinkle evenly with Onion Soup Packet (or ranch packet).

    Add cream of chicken soup and ½ cup chicken broth.

    Cover and cook on LOW for 3 hours, until the chicken is tender and nearly cooked through.

    Gently shred the chicken thighs (or leave whole) directly in the Crockpot.

    In a separate bowl, combine the dry stuffing mix, remaining ½ cup chicken broth, and melted butter. Stir until evenly moistened.

    Spoon the stuffing evenly over the creamy chicken mixture. Do not stir.

    Cover and cook on LOW for another 45–60 minutes, until the stuffing is hot and fully hydrated and the chicken reaches an internal temperature of 165°F.
