Beef & Cheese Enchilada Casserole – our favorite Mexican dish! Cheesy quesadillas drenched in savory beef enchilada sauce and topped with melted cheese. It’s always a hit, with everyone clearing their plates and grabbing seconds! Made with ground beef, taco seasoning, Rotel, enchilada sauce, cream cheese, pepper jack cheese, low-carb tortillas, and a blend of Mexican cheeses. It’s bursting with flavor and incredibly simple to prepare! Add your favorite taco toppings for a meal that rivals any restaurant.

Beef & Cheese Enchilada Casserole

The best part about this recipe is how easily it can be made low-carb and keto-friendly by using low-carb tortillas and enchilada sauce. Even though we don't follow a low-carb or keto diet, we always opt for the low-carb version of this casserole. It tastes fantastic and also helps cut down on calories!

  1. Preheat the oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray and set aside.
  1. In a skillet, brown the ground beef, then drain the fat. Add a packet of taco seasoning and water, and simmer until the liquid is absorbed, about 5 minutes. Stir in a can of enchilada sauce and Rotel diced tomatoes and green chiles, and simmer for another 5 minutes. Remove from heat.
  1. Spread half of the meat sauce in the bottom of the prepared baking dish. Spread cream cheese on small flour tortillas, then top with 2 cups of shredded cheese. Fold the tortillas in half and place them on top of the meat sauce in the baking dish. Pour the remaining meat sauce over the folded tortillas and sprinkle the remaining cup of cheese on top.
  1. Cover and bake for 20 to 25 minutes.

Note

Add the following vegetables to the tortilla: onions, peppers, diced green chiles, tomatoes, corn, and/or black beans.
